Extremely moist and loaded with blueberry.  This  Blueberry Yogurt Cake  was  super easy to put together

I made it healthier by using whole wheat flour to the ratio of 1:1, one cup plain flour and 1 cup of whole wheat flour.

For a richer cake, you could sub oil for butter.  But I prefer to use canola oil for this recipe.

Yogurt is nutritious and eating it regularly will boost your health  especially the one without sugar and artificial flavors.  It contains most nutrients your body needs.  High in protein, calcium and trace minerals.

Be cautious with yogurt intake if yo have lactose intolerance or a milk allergy.

Actually you can make this Blueberry Yogurt Cake with just one  bowl and no mixer required.   Let me show you how to do it.

1.  Whisk together both flour, baking powder and salt in a mixing bowl.

2.  Make a well in the center, break the eggs, beat lightly, add in oil. yogurt, vanilla  and sugar.   Give this liquid a good mix using a  whisk.

3,  Using a spoon, mix together dry and wet ingredients until well incorporated.  Mix in blueberry. Stir well.

The batter is now ready to be spooned into a greased pan and bake.

Am so glad this cake turned  great  with  beautiful golden color and  the blueberries are well distributed over the entire cake. .

A quick bread laden with cranberries and raisin.  I always love to bake this Cranberry Raisin Bread that was easy and super delicious to  have for breakfast.

Cranberries need to be chopped then soak in boiling water together with raisin, sugar, baking soda  and butter for at  least 30 minutes.

Alternatively you can  bring it  to a  boil, add in  cranberries, raisin butter and sugar.  Mix in baking soda, let stand for 5 minutes. Add the rest of the ingredients and it is ready to go the oven.

Cranberries Raisin Bread rose perfectly and so moist.  They are  best served warm in thick slices with your favorite drink.

A deep fried  savory  doughnut  made with semolina, onion, yogurt, cumin seeds and ginger.

If you are looking for a quick and without fermentation of dough, this  Semolina / Vada Vada is a perfect choice.

I have rest the dough for 30 minutes before frying also added  freshly ground black pepper but this is optional, you may omit it altogether.

Running out of green chili so have used red chili instead.

Because of  the  dough was very sticky, my Semolina / Rava Vada did not have a smooth round shape, nevertheless it tasted terrific!

TAFTAN BREAD RECIPE

Taftan or taftoon  is a  leavened bread  hailed from Persia,  baked in a clay oven.

I  discover this flatbread while watching a cookery show on television,   I  did some research. found out that it  could be made without yeast with just water. milk or yogurt salt and whole wheat flour.   My Taftan Bread  recipe adapted  from various sources use yeast, milk and oil.

The dough was really sticky and hard to shape.  You can add some flour by a tablespoon but not too much otherwise it turns really hard.

On a floured board, roll out each ball into a circle.  thin it out  so the edges are thicker. Prick the dough  with fork leaving the sides.

I can't believe how much better this  Taftan Bread  tastes than takeaway flatbread, even my hubby wanted more!.

BRAIDED CINNAMON BREAD RECIPE

Made from scratch,  this  Braided  Cinnamon Bread just got even better in shape and  taste.

You can also use this basic recipe to make a regular cinnamon rolls, dinner rolls,  sweet bun, monkey bread,  breakfast rolls and many more.  Simply  filling and shaping the base dough differently can result an entirely new product.

I have cut the dough  into  2 after shaping them into a log or you can easily turn it into one bigger loaf.

It smells wonderful while baking because of the addition of cinnamon.  The dough was easy to work with,   no additional flour required for mixing the dough.

Though my shaping wasn't  great but this Braided Cinnamon Bread is one of the best cinnamon rolls I ever made!

Super easy, quick and delicious Lemon Yogurt Cake  made with lemon zest, lemon juice and  and   topped with lemon frosting.

This cake uses vegetable oil and not butter as compared with other recipes.  At first, am reluctant to try it since it contains  high sugar in the cake plus for the frosting.

Surprisingly this Lemon Yogurt Cake has a right amount of sweetness and the best part was the frosting, it gives a wonderfully lemon  flavor. This will be my new to go recipe.

A popular dessert during  fasting month made with agar agar powder and  coconut milk.

This Agar Agar Gudir tastes even better with addition of  gula melaka (palm sugar),  If using this sugar you need not add any coloring at all.

Bought a red color agar2 powder so I use white sugar.  Make sure to purchase a colorless pack if you intend to add palm sugar.

The secret to a perfect Agar Agar  Gudir are:

1.  Sugar must be dissolved completely and it should be rolling boiling before you add coconut,

2,  After adding  egg mixture, it should be boiled until  the eggs curdle into  tiny bits.  This would make your Agar Agar  into 2 layers and looks very pretty.

A healthy version of  classic Samosa stuffed with fresh vegetables, made from scratch.

This famous fried snack from Indian subcontinent  are well liked and enjoyed around the globe.   Mostly they are deep fried and stuffed with vegetarian or non vegetarian fillings.

If you are looking for  an alternative way to eat them, this Baked Veggie Samosa is the solution.  These are stuffed with fresh vegetables  I  have on hand, capsicum, carrot, potato and tomato.

When mixing the dough, add water little by little.  You may not need to add the specified amount as per the recipe.

I did not boil the potato before hand but straight away add them to the spices and sprinkle with some water to let them become tender..

My Baked Veggie Samosa turned  out amazing, pastry is wonderful with crisp crust.   This one is a keeper!.

QUICHE BREAD CUPS RECIPE

A delightful mini bite made with bread slices, can  be  filled with all sorts of yummy filling.

Made these  Quiche Bread Cups with white sandwich bread but you could choose other type of bread too.

Use microwave to warm up the bread,  if you don't  have a microwave oven, you may steam them.   This procedure makes the bread soft and easy to shape without tearing.

This time I  chose capsicum and tomato plus a hint of chili powder to lift the flavor but feel free to include other vegetables and other spices you prefer.

Other add in I would suggest are cooked chicken, bacon or tuna.  If you love cheese, you may add a quarter cup of shredded cheese over the top of these  Quiche Bread Cups.

HOW TO MAKE FINGER ROLLS RECIPE

These  yeasted rolls are made with regular flour and whole wheat.

I have tried all sort of bread baking with variations of method. How To Make Finger Rolls use slightly different way from what I used to make.

Remarkably easy recipe but need muscle work if you're using your hand or else dump the dough in your stand mixer  or bread maker to knead it.

Another thing I notice that  How To Make Finger Rolls let you shape them immediately after kneading.  Then allow to rise until doubled for 1.5 to 2 hours.

When adding liquid to the dough, add in increments,  All flour is hot the same,  you may  need more or less water/milk as indicated.

I really enjoyed making them.  the dough is so lovely to work with. You can ice them or stuff with sweet or savory filling if desired.

This was made with lontong (rice cake) and flavored with blended chili, onion, sauces and chicken.

A versatile dish, it can adapted to suit your preference.  For instance the add in of vegetables can be bean sprouts,  mustard green, cabbage  or bok choy.   You can opt for prawn of minced meat instead of chicken..

Lontong Goreng is suitable to serve as breakfast or for lunch as well.  Nowadays lontong was readily available from supermarket 24/7 .

Adjust the sauces and  chili paste  to season the Lontong Goreng the way you like it.  For those who can't get hold of rice cake at you place, replace it with cooked noodle or spaghetti.

DIGESTIVE BROWNIES RECIPE

Deliciously yummy treat  using Digestive biscuits,  made from scratch.

Am craving for a dessert that was quick and easy that does not involve a complicated step to make.  So I decided to whip up  this Digestive Brownies.

Since I have a sleeve of digestive biscuits so why not incorporated them in brownies. I crushed these but you can use quartered digestive over the top of brownies batter.  Actually you can use other cookies but stick to this proportion , 1 1/2 cups to be added to the batter and 1/4 cup for topping (quartered or crushed).

Always prefer not so sweet treat so use only 3/4 cup of sugar, Digestive Brownies were so good even my hubby who are not keen having sweet dessert requested for extra pieces.

A traditional pancake made with fresh grated tapioca and coconut.

It has been over  10 years since  I have eaten this Tapioca Pancake served by my late mum.

Those days, we have to prepare the tapioca from scratch.  Peeling and grating was the first step for making this pancake.  Today grated tapioca was readily available in the market.

Using a non stick pan eliminated  the need to use excessive oil when frying  them.

Tapioca Pancake can be eaten with sugar or dip in spicy gravy.   Sugar could be added while mixing the batter for a sweet version. So I leave it to you to decide how you want to enjoy them.

First of all, Eid Mubarak  to  those celebrating and kindly forgive me for my MIA due to  some important  family commitments.

This Spice Apple Bread is a perfect choice to  make if you have extra apple stock. It is remarkable easy to whip up.

Using box grater, the royal gala apple works well for this recipe.   You can use other apple varieties as well.  Although you can't see the apple but the taste is there when you take a  bite.

This Keema Paratha is a wonderful recipe made with paratha (flat bread).   There are tons of variations you could do with this paratha.

Am using minced lamb but other meat are equally tasty too.  If you are a vegetarian, replace the meat with tofu, paneer or garbanzo beans.

Instead of using an individual ground spice, go for ready made spice mix like meat curry powder or korma powder if it is available at your place.

Also added cooked green peas for my Keema Paratha that blends so well with minced meat.

An egg free  Banana Scones made with regular pantry items and really easy to make.

I have 2 bananas lying on my kitchen counter and need to do something before it turns bad.

After so long, I did not make any scone so  this Banana Scones  are the best option.

The dough was bit sticky but still  manageable.  Am able to shape it into 7 in round onto floured baking pan with my hand.  Place the dough in the middle of the pan, pat on top and run your hand along the edges to give it a nice round shape to the thickness of 3/4 in.

My Banana Scones take exactly  20 minutes to bake but it may vary depending type of oven you are using, so adjust accordingly.

FRIED TEMPEH & POTATO IN SOY SAUCE RECIPE

Mixed vegetables  dish  consisting of  fried  tempeh and  potato simmered in spicy sweet soy sauce.

One of my son's favorite vegetables, tempeh (fermented soya  bean cake), potato  with loads of bird's eye chili.

Fried Tempeh & Potato in Soy Sauce was extra spicy due to addition of bird's eye chili.  Spices are a matter of individual taste so adapt accordingly.

Adjust the soy sauce and sugar to your liking.  Cut the tempeh and potato into almost equal size for  uniform cooking.  If you choose a healthier option, do boil,  bake or microwave the potato  until done but still nice and firm.

Fried Tempeh & Potato in Soy Sauce is a versatile dish.   In case you run out of potato, easily replace it  with tofu  or sweet potato. For extra crunch and taste,  add some fried anchovies to the above and toss well..

DORAYAKI RECIPE

Dorayaki is a popular Japanese pancake sandwich with sweet red bean paste,  eaten for breakfast, as a dessert or snack.

This pancake uses least liquid but more eggs to get those super soft texture.  I rest my batter for 30 minutes  before frying.

The original dorayaki is  sandwiched with red bean paste but I don't have them at the moment so replace it with chocolate and some with  peanut butter and jelly.

Since the batter contains sugar and honey, it tends to brown faster.   so you need to watch first few  carefully  and adjust the heat accordingly.

The fluffy and fragrant  little  Dorayaki   turned out so cute and DELICIOUS.   Am going to try next with other fillings such as blueberries, coconut jam (kaya), strawberries and many more.

CHOCOLATE BISCUIT CAKE RECIPE

The easiest and most decadent no bake Chocolate Biscuit Cake made  using crumbled biscuits, cocoa powder. and eggs.

In Italy or Portugal they shaped this dessert into a log  called Chocolate Salami and  a bit of port wine was added in their recipe. For Malaysia it is known as Batik Cake made with milo,  cocoa powder, condensed milk and eggs.  Some uses dark chocolate instead of cocoa powder.

Used brewed coffee  but you can replace it with  cream or milk.

I have shaped mine into a log but you can just pour the mixture onto lined cake or loaf pan.  Cover the pan with plastic wrap before letting it set in  freezer or refrigerator.

Chocolate Biscuit Cake is a great way to use up  leftover biscuit and to transform it into a  wonderful treat for your family and friends.

Mutabbaq is a stuffed flat bread originating from Saudi Arabia.  It is now popular in   Malaysia, Singapore, Brunei, Thailand, Indonesia and India,  The name and ingredients may significantly vary from one country to another.

My Mutabbaq Recipe was stuffed with tuna,  It could be filled with your choice of fillings.  Be it sweet or savory.  It can be enjoyed anytime of the day,  You could use  minced meat or  turns it meatless if you are vegetarian.

When adding liquid or milk to the flour, add in little by little until you get a  soft dough.  Add more milk if needed because it depends on type of flour you use.

When rolling out the Mutabbaq on dusted surface,  make sure it is really thin to ensure  fully cooked  bread and proper balance of dough and filling.

I used my non stick pan to fry these mutabbaq and much less oil but you could use cast iron pan if you have.

MANGO CAKE RECIPE


A homemade Mango Cake made with fresh mango.  Always love to add a fruit in my dessert.   I left with no more mango so unable to use this fruit for topping or as a prop.

Used fresh pureed mango but you can make use of canned one too. Make sure you drain the fruit well.

Adjust the sugar according to the sweetness of the mango, may be you need not use all the amount stated in the recipe.  For richer cake, opt for melted butter instead of vegetable oil.

Mango Cake turned out great without cracks on top.  You can definitely play around with your favorite frosting to dress up this cake.

THE BEST SWEET YEAST ROLLS RECIPE

A slightly different way to make a fluffy rolls.  Am curious to know how The Best Sweet Yeast Rolls turned  out after watching a video by Today Food-Tasty..

It starts by mixing flour. sugar. warm milk and melted butter in a mixing bowl.  No kneading at this stage, cover and let rise for 60 minutes.

After the dough has risen, add baking powder, salt and additional flour little by little. Stir the dough together with your rubber spatula or wooden spoon. The dough is super sticky. Roll out on heavily floured surface into a rectangle, apply butter and sprinkle with brown sugar (I used orange colored one).   Equally cut into 10 slices.  Roll each into a ball and place onto a greased baking pan.

Original recipe is called Homemade Cinnamon Rolls but  I  change my mind and shape them into a round ball.

The Best Sweet Yeast Rolls turned out PERFECT,  rose beautifully. Amazing taste, worth all my effort.
