SUJI COOKIES



Very easy and fail proof cookies I have baked several times. Since the ghee was not in hand, substituted  ghee with butter and it turns our perfect.  Suji Cookies are baked for about 20 minutes so do check your oven. Recipe by Chef Devagi.


SUJI COOKIES 

250g ghee (clarified butter)
1 teaspoon vanilla essence
500g plain flour
2 teaspoons bicarbonate soda
170g icing sugar
3/4 teaspoon fine salt

INSTRUCTIONS

Melt ghee over low heat and cool.
Add vanilla essence to cooled ghee.
Sift flour, bicarbonate soda, icing sugar and salt into mixing bowl.
Pour ghee mixture in flour mixture and knead well to form a firm dough.
Preheat the oven to 180C.
Roll dough into melt-in-your-mouth ball sizes and place on greased tray.
Bake for 25 - 30 minutes till cooked but not brown. The cookies should be white and crumbly in texture.

Mom2fur...thanks for visiting and leaving your sweet comment, I'm not sure about this but "suji" means semolina unfortunately it is not used at all in this recipe. Perhaps it is related to since semolina is often used in Indian cooking.
