CINNAMON ROLLS

If you're looking for soft and delicious cinnamon rolls you should try this one. These are great for breakfast or your afternoon snack. Baking bread is really challenging, it takes time to prepare but once they have baked to perfection with a fantastic aroma you're overjoyed and relieved.

You could easily purchase these rolls from your nearby bakery but nothing beat the homemade rolls, fresh from the oven. The best part about making this roll is that the dough can be shaped, sliced and frozen. When you need them just thaw and let rise again before baking. What you need are:

CINNAMON ROLLS

2 and 1/2 C bread flour
2 and 1/4 tsp active dry yeast
3/4 C warm water
1/4 C white sugar
3/4 tsp salt
1 egg
1/4 C softened butter
1 T cinnamon
1/2 C brown sugar

METHOD

* Dissolve yeast in warm water, let stand until frothy about 10 minutes.

* In a mixing bowl, combine yeast mixture with sugar, salt, egg and 1 cup flour, stir well to combine. Stir in remaining flour, forms into pliable dough. Knead about 10 minutes.

* Let rise in a covered and oiled bowl until double about 1-2 hours.

* Grease 8 x 8 pan, roll out on floured surface to 1/4 inch thick rectangle. Brush with butter, sprinkle cinnamon and brown sugar. Roll up jelly roll style, slice into 16 equal size pieces, place them in the pan.

* Cover pan with plastic wrap and refrigerate overnight or let rise until double about 45 minutes.

* Preheat oven @ 190 C, brush with butter, bake rolls until golden brown about 15-20 minutes.

* Remove and cool rolls on wire rack.
