Looks complicated but Easy & Yummy Sweet Sour Prawn  is an easy recipe.  I have sent my kid to purchase the prawn but due to shortage of seafood products, manage to get this smaller variety.  Presently our fish port is closed due to Covid-19.  If you could get the bigger prawn, would look better.  

Fried prawn is coated with spicy, sweet and sour sauce from tomato, chili sauce and lemon juice. To add color, red, yellow and green bell pepper are added.  You can add sugar if you like but for me it is not required.

Easy & Yummy Sweet Sour Prawn  was always a favorite among my family and friends.  You could also use fish, squid or chicken for making this dish.

PAV BHAJI

Pav Bhaji is a famous street food of India consisting of pav or dinner rolls either homemade or store bought together with bhaji made from curried mashed vegetables like potato, carrot, cauliflower, green peas and bell  pepper.

You can prepare Pav Bhaji using stove top or pressure cooker method for quick satisfying meal.  This is a 2 step process, first vegetables are boiled until soft then  mashed with potato masher or hand held blender. The texture is up to you either smooth paste of little chunky.

In another pan, masala with onion and tomato is prepared , mashed vegetables are added to this masala.  The spice blend is different from one household to another.  The special ingredient was pav bhaji masala,  am using ready pav bhaji masala that is available from Indian grocery store.

Most people love the bright red color this masala brings without artificial coloring by adding kashmiri chili or red chili powder. Adjust red chili powder according to your preference.  For natural deep red color, add a small piece of  beetroot along with other vegetables.

You can also use broccoli, french bean, brinjal, sweet corn, beetroot or raw banana.

MOIST LIGHT FRUIT CAKE

After long time, I have baked this Light Fruit Cake  for my family.  As requested again, by  my son, am going to bake his favorite cake.   

Always prefer less sweet and light fruit cake and this Moist Light Fruit Cake has a right balance of mixed fruit and sweetened with brown sugar.   

It is quite easy to make and a real crowd pleaser.  You can eat it anytime of the year not only for Christmas.

Used store bought dry fruit mix or mix your own dried fruit,  coated the fruit mix with flour before adding to the flour mixture. 

As am running out of fruit juice, have added half a cup of isotonic drink.

For eggless version, replace an egg with 1/4 cup plain yogurt or 1/4 cup apple sauce.

Moist Light Fruit Cake bake perfectly for flat 45 minutes and my son can't wait to devour after it came out of oven.  My family gave a thumbs up to this beautiful cake.

Another oil free cooking from my kitchen  with little twist.  Petola or peerkangai in Tamil would taste better if it is young otherwise the old one is fibrous and not pleasant to eat.  Luffa is cooked in coconut milk together with blended ingredients.



Petola Masak Lemak / Luffa in Coconut Milk is just a basic recipe.  You can add or leave out any ingredients you dislike for example, I have added tiger prawns towards the end of cooking as have lightly fried them first and remove to a plate but this is optional. 

For additional kick have used bird's eye chili for this Petola Masak Lemak / Luffa in Coconut Milk.  If you are not a fan of this, just add green or red chili for milder version.

I always love to explore new ways to incorporate veggies in our diet. This Amazing Carrot & Sweet Potato Pancake  is  made with shredded carrot and sweet potato flavored with green chili, onion and ginger. 

It tastes like dal vada that I used to eat.  In my quest to reduce my intake of rice and wheat noodles, i am happy to share my search for this  quick and healthy meal.  

Sweet Potato is high in fiber,  Vitamin C, potassium , decent source of other vitamins and minerals, and rich in  antioxidant  called beta carotene which is very filling.  It can be boiled, steamed, baked or fried. 

Carrot is highly nutritious, high in Vitamin A,C and K, beta carotene,  vital for eye health, low in calories/carbs  and help improve your  immune system.

This Amazing Carrot and Sweet Potato Pancake  not only light but exceedingly tasty.  You could also turns this into cutlets instead of one big pancake.

This simple Homemade Pumpkin Hashbrowns  was made with grated pumpkin using box grater with light seasonings for a healthy and yummy breakfast or brunch. 

Adjust the seasonings according to your preference.  Feel free to add garlic and  herbs fresh or dry to enhance the taste of this Homemade Pumpkin Hashbrowns

You could also make one large hashbrowns instead of individual patty.  Just scoop the pumpkin mixture onto the pan, flatten to shape into a big disc.  To flip without breaking, transfer it to a plate then put it back in a pan, uncooked part down.

This recipe yields 5 hashbrowns or patties.   Serve them with ketchup, mayo or yogurt.

IKAN MASAK ASAM REBUS aka FISH IN HOT SOUR SOUP is a favorite of my parent.  It is very healthy as no oil is used.  The fish is cooked in tamarind and chili soup, it has tangy, spicy and slightly sweet taste.

You can use almost any fish but common one was mackerel, tuna, yellow stripe scad (selar kuning)  but I choose red snapper.

Before you start cooking, make sure to clean your fish properly. First remove the balance of scales from the body if any, the easiest way was to ask the fish seller to do that for you.  Then take out the gills, fats and organ otherwise you have a fishy stale smell after it is cooked.

Remove blood clots at the back bone of the fish.  It is not visible as it was covered with a membrane.  Slit open this white membrane and dig out the blood clots. Wash this with running water.  After that I soak my fish for 10 minutes in which 2 small lime juice was added, drain and coat with turmeric and salt.

Substitutions :   5 fresh red chili and 3 bird's eye chili instead of blended chili

1 teaspoon of shrimp paste (belacan) instead of dry anchovies

2-3 pieces asam gelugor  (dried tamarind slices) instead of tamarind paste

1 inch turmeric root instead of turmeric powder

MY SAMOSA STORY

Am so tempted to make my own  Samosa since my feeds are flooded with it.  Made Baked Samosa before but my kids requested the fried version.  The pastry was almost the same from one another but the filling might differ slightly. 

I have used potato, green peas, carrot, chili powder, turmeric, cumin seeds, ginger, chat masala and garam masala for My Samosa Story.   I fold the pastry differently. 

Roll out the pastry into circle, cut 1 cm strips lengthwise on half of the pastry, wet the the half with water, fold into two.  Stuff the filling at the center (strips one down), fold into thirds to get triangle shape. Wet the edges and seal properly,  this is ready to be fried until golden. 

My Samosa Story did not disappoint, it turned out golden color and  insanely delicious.  I have a tip for you for getting smooth pastry.  Fry the samosa using  medium heat  and the oil should not sizzle,  also do not crowd the pan.

Eid Mubarak to all who is celebrating.  May this occasion bring joy and happiness to you and family! 

Biryani is one of the famous dish in the world.  It needs no introduction.  There were wide variations of Biryani.  Some used chicken, mutton or seafood.  Also available in  vegetarian version.

I have tried Mutton and Chicken biryani for the past years. As requested, this year I tried Amazing Beef Biryani.  There were few steps for cooking this biryani.  First marinate the meat with  yogurt and spices before proceeding.  Secondly cook the meat using ready made biryani masala until it turns tender then boil the soaked rice in salted water and whole spices.  Final step, layering  the rice with cooked beef, drizzle  yellow food coloring, fried onion and chopped cilantro/mint leaves before we slow cooked the biryani for 10 minutes. 

Amazing Beef Biryani is being served for Eid together with okra raita.  It was super duper hit with family and relatives.  The meat almost  fall off the bone, so tender and flavorful!

SPICY AND YUMMY CHICKEN CUTLET

SPICY AND YUMMY CHICKEN CUTLET

500 g boneless chicken ground
1 tsp ginger minced
1 tsp garlic minced
1 tsp chili powder
1 tablespoon whole cumin
1/2 cup chopped cilantro
2 big onion chopped
1/2 tsp garam masala
1/2 cup crushed cornflakes
oil for shallow frying
salt to taste

DIRECTIONS

Coarsely blend boneless cut chicken with cornflakes using a food processor.

Add in the rest of the ingredients except oil  and run the processor
just to combine the ingredients.

Remove chicken and place in a bowl,   Scoop the chicken to shape into  cutlet.

Heat oil in a frying ball, slide 4-5 cutlet at a time.  Shallow fry in oil over medium heat  for 4 minutes on each side or until golden brown,

Remove on an absorbent paper, serve with sauce or chutney.

Date Bread (Eggless)   is the easiest  loaf  of  yeast bread you will ever bake. This recipe produces a soft crust and moist center using the most basic ingredients that can be found in most kitchens.

Instead of raisin, I had used chopped dates and this is also an egg free recipe. The dough is easy to handle and it takes about an hour and half to rise. 

This Date Bread (Eggless)   is wonderful. It smells so good while baking. The texture is perfect and just a right size for my family. It is a favorite bread for many families because it can also be eaten as healthy snack.

This is a unique  meat curry where fresh  pan roasted and blended curry leaves is added in the gravy.

Curry Leaf  Meat  Curry could be made with mutton or  chicken   too.  Chicken takes lesser time to cook, so adjust accordingly.

By adding curry leaves, Curry Leaf  Meat Curry  would turn greenish in color but I added more onion and tomato so  green color is not visible.

If you want a semi dry gravy, add less water but if the meat is still tough,  keep adding  half a  cup water of water until  you achieve the required consistency of the gravy.

You can adjust the spiciness of this recipe by decreasing or increasing  number of  green chili  and  chili powder.

The meat gets  really  tender and the sauce becomes incredibly flavorful.  This goes well with rice, chapati, appam, prata  or naan.

If rolled oat isn't available, replace with plain flour or self rising flour.   You can also add an egg but reduce milk to  1/2 cup.

They are great to make ahead then store in a refrigerator  Place the dough in a greased bowl and cover with plastic wrap before storing. Remove from fridge. shape as desired.  Cover  and let rise until doubled before baking.

1.   How to cut onion without tears
Soak onion in a bowl of water before cutting or  keep onion in a fridge for several hours before peeling them

Use a plastic/wooden  hanger with clips on left and right.  Just clip the page you want to view and  hang the hanger

3.  Clean your  stove burners without scrubbing
Sprinkle baking soda plus few drops of water over your burner, let sit for 20 minutes.  Use wet sponge or  towel to wipe clean

4.  Remove stain on your porcelain cup
Rub the inside of your cup with baking soda,  rinse well

5.   How to puree soft fruits
No need to use a blender, a wire whisk would do the job

This is my last post for 2018.   Dear readers, you mean so much to me always, always will.   This new year greeting comes with  warmest wishes for you.  And wishes of health,  happiness and prosperity too.

Home Made Pizza is really easy and fun to make. You can either use a  food processor or bread machine but this recipe is done by hand. Pizza is an ideal quick dinner, if you have ample supply of ready made crust in your freezer and have simple toppings on hand, your family can have a decent hot meal..

You can adapt any pizza recipe to your own taste with varied topping. However you have to follow the method properly to get perfect pizza. Balance of the pizza sauce can be kept frozen for later use.

The topping ideas  for Home Made Pizza  are endless, you can choose cooked chicken, seafood, minced meat, tuna or hot dog together with pineapple, olive, mushroom, eggplant and many more.  A make- your- own pizza dinner  is a wonderful way to get your family together in your own kitchen.

HOME MADE PIZZA RECIPE

2 1/2 cups all purpose flour
1 cup warm water
2 tbsp olive oil
2 tsp honey or sugar
1 tsp  dry yeast
1/2  tsp salt

PIZZA SAUCE
1/2 cup tomato puree
1 cup chopped tomatoes
1 onion sliced
3 garlic minced
2 tsp chili powder or to taste
1 tsp mixed herb (optional)
salt, sugar to taste
oil

TOPPING

Sliced onion
Sliced capsicum
Sliced tomato
Chicken cooked and diced
mozzarella cheese

HOW TO PREPARE PIZZA SAUCE

Heat the oil. add onion and garlic fry until fragrant. Add tomatoes, salt and sugar cook until soft. Add in chili powder, tomato puree and the herb. Simmer for 15 minutes. Cool.

METHOD FOR PIZZA

1.Mix yeast, sugar with warm water in a bowl and wait till mixture bubbles.

2.Put flour and salt and oil in a large mixing bowl. Make a well and pour in yeast mixture.

3.Mix until the flour and yeast come together in a ball. Knead for 5 minutes.

4.Let the dough rise for at least one to 1.5 hours.

5.Dust dough with some flour and flatten it, to clear the air.

6.Divide dough into  1 or 2 smaller round.  Roll the dough out into round shape about 1/4 in thick.

7.Place in a pizza pan,  spread the pizza sauce evenly and add the toppings.

8.Baked in a preheated 230 deg C oven for 10 minutes until crust is lightly browned.

1.   Place few sticks of cinnamon in  your sugar jar to get rid of ants.

2.  Microwave lemon and other fruits  for 20 seconds can double the juice you get from them

3.   To eradicate tiny black bugs living in your rice, flour and pasta container, place few bay leaves or garlic.

4.   Are your eggs really fresh?  Place them in a bowl of cold water, if it sinks to the bottom, they are fresh

5.   Use dental floss instead of knife to slice a cake, cheese or cold butter

6/   Soak limp lettuce, celery and carrot in ice water for an hour.  They will   become crisper

7.    Rub your hand with oil. before chopping chili  to prevent chili oil contacting your hands

8.   To remove bad smell from your hands, rub with lemon or vinegar after rinsing them

9.   Try swapping oil with apple sauce for a healthier sweet treats

10.   Avoid salt or high sodium seasonings, especially if you have high blood pressure.  Use  herbs, vinegar, tomato or onion instead

This chicken recipe is made with freshly ground spices with  easy method.

There are tons of recipe for Kerala Chicken Curry, you can find online.   Some uses fresh coconut  but this one without.

Am attracted to try out since it was way simpler when compared with others and uses  homemade spice blend.

You can remove the skin before cooking for  less fat option.

Adjust the spice according to your preference, either reduce or increase the dry chili used. Another interesting ingredient was the use of 20 whole shallots that makes this Kerala Chicken Curry its distinctive sweetness.

It goes well with rice, pulao or  flatbread.   We had friends  who dropped by unexpectedly  and joined us for dinner and  they loved it too.

It has been months I bake brownies for my family.  They are simple to make by combining dry ingredients in one bowl while whisking the wet ingredients in a separate bowl.

For non cake like brownies, always undercook them a bit so they are moist and gooey.

Let the How to Make Chocolate Brownies  cool  completely before slicing with a thin knife dipped in hot water then wiping dry or use a plastic one to get a smooth evenly cut brownie.   I usually  don't go for all the trouble  since people eat brownies too quickly to care what they look like.
